Simple Homemade Beef Chili

Simple Homemade Beef Chili (An Easy One-Pot Recipe)
Hello. Some days just require a big, warm bowl of chili. But if you look online, many recipes are incredibly complicated. This is my guide to a simple homemade beef chili that is comforting, delicious, and easy to make on a weeknight.
The Honest Truth About Chili
In my old job, I wrote a lot of “award-winning” chili recipes. They always had a secret ingredient, a dozen different kinds of peppers, and a list of instructions that was a mile long. It was all for show. It made chili seem like this huge, all-day project.
That’s not what this is. This is a rescue.
The truth is, you do not need twenty different ingredients to make a great chili. You don’t need to simmer it on the stove for eight hours. You just need a few simple, hardworking pantry staples and a good, honest technique. This is a real-world easy chili recipe for a real, busy person.
The Two Secrets to a Flavorful, Quick Chili
A great chili is all about building deep, savory flavor. Many quick chili recipes end up tasting like a bland tomato soup with some meat in it. We can fix that.

Secret #1: Brown Your Meat Properly.
This is the most important step for a rich, beefy flavor. Many people just put the ground beef in the pot and stir it around until it’s grey. That is a mistake.
You want to let the beef get a real, dark brown crust. To do this, get your pot hot over medium-high heat. Then, add your ground beef and use a spoon to break it up into large chunks. Now, don’t touch it. Let it sit and sizzle for a good 3-4 minutes. This allows the bottom to get a deep, brown sear. That brown stuff is where all the flavor is. After that, you can start breaking it up and stirring it.

Secret #2: “Bloom” Your Spices.
The second secret is to wake up your dried spices. Spices have flavor compounds that are “fat-soluble,” which means they taste much better when they are cooked in a little bit of fat.
So, after your beef is browned, you will drain the excess fat. But before you add your tomatoes and beans, you will add your spices directly to the hot pot with the meat. Stir them for just one minute. You will smell them become incredibly fragrant. This simple step makes your chili taste like it has been simmering for hours.
The Ingredients: Simple Pantry Heroes
This is a true one-pot chili. Everything comes together in one pot, and it uses simple ingredients you can always have on hand.
- The Meat: I like to use a lean ground beef, like 90/10. But an 80/20 will also work, just be sure to drain the fat well.
- The Aromatics: A simple chopped onion and a few cloves of minced garlic are the perfect flavor base.
- The Spices: You just need a few basics. Chili powder, ground cumin, and a little smoked paprika are a perfect combination.
- The Pantry Heroes: Canned crushed tomatoes create a perfect, thick base. Canned diced tomatoes add a nice, chunky texture. And canned kidney or black beans make the chili hearty and filling.
Simple Homemade Beef Chili
Ingredients
1 tablespoon olive oil
1 large onion, chopped
3 cloves of garlic, minced
1 lb (450g) lean ground beef (90/10 is great)
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon salt, plus more to taste
1/4 teaspoon black pepper
1 can (28-ounce) crushed tomatoes
1 can (15-ounce) diced tomatoes, undrained
2 cans (15-ounce) kidney or black beans, rinsed and drained
For Serving (Optional Toppings): Shredded cheddar cheese, sour cream or Greek yogurt, chopped cilantro, tortilla chips.
Instructions
Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion and cook for 5-7 minutes, until softened. Add the minced garlic and cook for one more minute until fragrant.
Brown the Beef: Add the ground beef to the pot. Use a spoon to break it into large chunks and let it sit for 3-4 minutes to get a deep brown crust on the bottom. Then, continue to cook, breaking it up, until it is no longer pink. Drain off any excess fat.
Bloom the Spices: Turn the heat down to medium. Add the chili powder, cumin, smoked paprika, oregano, salt, and pepper directly to the pot with the meat. Stir constantly for one full minute until the spices are very fragrant.
Simmer the Chili: Pour in the crushed tomatoes, the undrained diced tomatoes, and the rinsed and drained beans. Stir everything together.
Bring the chili to a boil, then reduce the heat to low, cover the pot, and let it simmer for at least 20 minutes to allow the flavors to meld.
Taste and Season: Before serving, taste the chili. Add more salt, a little at a time, until the flavors are just right.
Serve: Ladle the chili into warm bowls and top with your favorite toppings like cheese, sour cream, and cilantro.
Notes
Notes
- Make it Your Own: Feel free to add a can of corn or some diced bell pepper along with the beans for extra veggies.
- Spice Level: This recipe is a mild, family-friendly chili. If you like it spicier, you can add a pinch of cayenne pepper or a chopped jalapeño with the onions.
- Leftovers are Best: Chili always tastes even better the next day! Store leftovers in an airtight container in the fridge for up to 4 days.
Kitchen Rescue Tips!
-
The Problem: “My chili is too thin!”
- The Quick Fix: The easiest rescue is to just let it simmer with the lid off for another 10-15 minutes. This allows the extra liquid to evaporate. You can also gently mash some of the beans against the side of the pot with a spoon; the starch will help to thicken it naturally.
-
The Problem: “My chili tastes bland!”
- The Rescue: It almost certainly needs more salt. Add salt in small pinches, stir, and taste again. If it still feels like something is missing, a squeeze of fresh lime juice or a tiny splash of apple cider vinegar at the very end will make all the flavors pop.

A Few Final, Honest Rescue Tips
Even with a simple recipe, it’s good to have a few rescues.
- The Problem: “My chili is too watery and thin.”
- The Rescue: This is the most common chili problem, and the fix is easy. First, just let it simmer with the lid off for another 10-15 minutes. The extra liquid will evaporate and the chili will thicken. If you’re in a hurry, you can use a potato masher to gently mash some of the beans directly in the pot. The starch from the beans is a great natural thickener. This is how to thicken chili without adding any flour.
- The Problem: “My chili tastes a little bland or one-note.”
- The Rescue: It probably just needs a little more salt. Add a small pinch, stir, and taste again. If it still feels like something is missing, it needs a splash of acid. A squeeze of fresh lime juice or a small splash of apple cider vinegar stirred in at the very end will make all the other flavors wake up.
- What are the best toppings for chili?
- Toppings are the best part! A dollop of sour cream or Greek yogurt, a sprinkle of sharp shredded cheddar cheese, some chopped fresh cilantro, or a few crunchy tortilla chips are all fantastic choices.
