1 thick slice of good, crusty bread (sourdough, whole grain, or artisan bread is perfect)

1/2 large, ripe avocado

A generous squeeze of fresh lemon or lime juice (about 1 teaspoon)

A pinch of flaky sea salt

A few grinds of fresh black pepper

A pinch of red pepper flakes (optional, for a little kick)

A tiny drizzle of extra virgin olive oil (optional, for finish)

Instructions

Toast the Bread: This is a crucial step! Toast your slice of bread until it is golden-brown and crispy. You want it to be sturdy enough to hold up to the avocado.

  • A slice of avocado toast topped with a perfectly fried egg with a runny yolk.

Prepare the Avocado: While the bread is toasting, scoop the flesh of the avocado half into a small bowl.

Mash & Season: Use a fork to gently mash the avocado. I like to leave it a little chunky for the best texture. Immediately add the lemon juice, flaky sea salt, black pepper, and red pepper flakes. Stir to combine.

Assemble and Serve: Spread the seasoned avocado mash evenly over your hot toast. Drizzle with a tiny bit of olive oil if you like. Enjoy immediately!
