Whisk the Eggs Well: In a small bowl, crack the eggs. Add the milk, salt, and pepper. Whisk everything together vigorously for about 30 seconds until the mixture is a pale yellow and slightly frothy. This adds air, which is the first secret to fluffy eggs.

Heat the Pan: Melt the butter in a non-stick skillet over medium-low heat. Do not let the butter brown.

Cook the Eggs: Pour the egg mixture into the warm skillet. Let it sit, untouched, for about 15-20 seconds until the edges just begin to set.

    The Gentle Stir (The Magic Step!): Using a rubber spatula, gently push the eggs from the edge of the pan toward the center in long, slow sweeps. This will create large, soft, fluffy curds. Continue this gentle pushing motion around the pan.

    The "Almost Done" Finish: When the eggs are mostly set but still look a little wet and glossy, immediately remove the pan from the heat. The residual heat in the pan will finish cooking them to perfection. This is the secret to never having rubbery eggs.
