Ingredients

1 lb (450g) ground turkey (93% lean is best)

1/2 cup plain breadcrumbs

1/4 cup milk (any kind works)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 small onion, finely grated or minced

1 large egg, lightly beaten

2 cloves of garlic, minced

1 teaspoon Worcestershire sauce

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

  • A cast-iron skillet filled with juicy turkey meatballs simmering in a rich tomato sauce, garnished with fresh basil.

Preheat & Prepare: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    Make the Panade (The Secret Step!): In a large bowl, mix together the breadcrumbs and the milk. Let it sit for 5 minutes until the breadcrumbs have absorbed the liquid. This is the key to juicy meatballs!

    Combine the Ingredients: To the same bowl, add the ground turkey, Parmesan cheese, parsley, grated onion, egg, garlic, Worcestershire sauce, salt, and pepper.

      Mix Gently: Use your hands to gently mix all the ingredients together until just combined. Do not over-mix, or your meatballs will be tough!

      Roll the Meatballs: Roll the mixture into balls about 1.5 inches in diameter (a little smaller than a golf ball) and place them on your prepared baking sheet.

        Bake: Bake for 18-20 minutes, or until the meatballs are cooked through and lightly browned. The internal temperature should be 165°F (74°C).

        Serve: Serve the meatballs immediately, or add them to your favorite tomato sauce to simmer for a few minutes before serving.

          • Don't Overmix: This is the most important rule for tender meatballs. Mix only until the ingredients are evenly distributed.
          • Serving Ideas: Perfect with marinara sauce and spaghetti, in a meatball sub with melted provolone cheese, or served on their own with a dipping sauce.
          • Freezer Tip: You can freeze these either raw or cooked. To freeze raw, place the rolled meatballs on a baking sheet in the freezer until firm, then transfer to a freezer bag. Cook from frozen, adding about 10 minutes to the baking time.

          • The Problem: "I accidentally overcooked my meatballs, and they're a little dry!"
          • The Quick Fix: Don't worry, an easy rescue is to let them simmer in a sauce for a little while. Place the cooked meatballs in a pot with your favorite marinara sauce and let them gently simmer on low heat for 15-20 minutes. They will absorb the moisture from the sauce and become tender again.
