Ingredients

3-4 lbs (about 1.5 kg) beef chuck roast

1 tablespoon neutral oil (like avocado or canola)

Salt and black pepper

1 large yellow onion, roughly chopped

4-6 cloves of garlic

1 can (7-ounce) chipotle peppers in adobo sauce (use half for less heat)

1/4 cup apple cider vinegar

1/4 cup beef broth

2 tablespoons fresh lime juice

1 tablespoon ground cumin

1 tablespoon dried oregano

1/2 teaspoon ground cloves

2 bay leaves

Instructions

Sear the Beef (The Flavor Secret!): First, pat the chuck roast completely dry with paper towels. Season it generously all over with salt and pepper. Heat the oil in a large skillet over medium-high heat. Carefully place the roast in the hot pan and sear for 3-4 minutes per side, until a deep brown crust forms. Transfer the seared roast to your slow cooker.

    Make the Sauce: In a blender, combine the chopped onion, garlic, the entire can of chipotle peppers with their sauce, apple cider vinegar, beef broth, lime juice, cumin, and oregano. Blend until the sauce is completely smooth.

    Combine and Cook: Pour the blended sauce over the beef in the slow cooker. Tuck the two bay leaves down into the sauce.

      Slow Cook: Cover the slow cooker and cook on low for 8-10 hours or on high for 4-5 hours.

        Shred the Beef: The beef is done when it is incredibly tender and easily falls apart when you press it with a fork. Remove the beef from the slow cooker and place it on a large cutting board. Use two forks to shred the meat. Remove the bay leaves from the sauce and discard them.
