Ingredients

1 cup blanched almond flour

1 large, very ripe banana, mashed well

2 large eggs

1 tablespoon maple syrup or honey (optional)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

A pinch of salt

Coconut oil or butter, for the pan

Instructions

Combine Wet Ingredients: In a medium bowl, whisk together the mashed banana, eggs, maple syrup, and vanilla extract until smooth.

Add Dry Ingredients: Add the almond flour, baking powder, cinnamon, and salt to the same bowl.

Mix Gently: Stir everything together until just combined. The batter will be thicker than traditional pancake batter. Do not over-mix.

Heat the Pan: Heat a non-stick skillet or griddle over medium-low heat. Add a little coconut oil or butter to coat the surface.

    Cook the Pancakes: Spoon about 1/4 cup of batter for each pancake onto the hot skillet. Cook for 2-3 minutes on the first side, until you see little bubbles appear on the surface and the edges look set.

      • Use a Ripe Banana: A banana with lots of brown spots is perfect! It will be sweeter and easier to mash.
