Ingredients

1 lb (450g) Italian chicken or turkey sausage, cut into 1-inch pieces3 bell peppers (a mix of colors like red, yellow, and orange), sliced1 large red onion, sliced2 tablespoons olive oil1 teaspoon Italian seasoning1/2 teaspoon garlic powder1/2 teaspoon salt1/4 teaspoon black pepperFresh parsley, chopped (for garnish, optional)

Instructions

  • Instructions (The Step-by-Step)
Preheat & Prepare: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for the easiest cleanup.
Arrange the Pan: Spread the sausage and vegetable mixture in a single, even layer on your prepared sheet pan. Make sure not to overcrowd it!
Roast: Place the pan in the oven and roast for 20-25 minutes, flipping everything halfway through, until the vegetables are tender and the sausage is cooked through and lightly browned.
Serve: Garnish with fresh parsley if you like, and serve immediately
  • Combine Everything: In a large bowl, add the sausage pieces, sliced bell peppers, and sliced red onion.
  • Season: Drizzle the olive oil over the sausage and veggies. Sprinkle with the Italian seasoning, garlic powder, salt, and pepper. Toss everything together until it's all evenly coated.

Notes

Notes

  • Serving Ideas: This is delicious on its own, served in a crusty roll as a sandwich, or over quinoa, rice, or pasta.
  • Don't Overcrowd: The secret to perfectly roasted veggies is giving them space. Use two pans if you need to, so they roast instead of steam.
  • Pro-Tip: For a little extra flavor, drizzle with a tiny bit of balsamic glaze right before serving.

Kitchen Rescue Tips!

  • The Problem: "My veggies are soggy, not roasted!"
  • The Quick Fix: Your pan was too crowded, or your oven wasn't hot enough. Don't worry! You can spread them out more and put them back in the oven for 5 more minutes at a higher heat (425°F / 220°C) to help them brown.
  • How to Prevent It Next Time: Always preheat your oven fully and make sure your ingredients are in a single layer with space to breathe. That's the key to perfect roasting
