1 teaspoon fresh ginger, grated

1-2 teaspoons gochujang (Korean chili paste), or more to your taste

1 lb (450g) lean ground beef (90/10 is great)

4 cups cooked white or brown rice, for serving

For Garnish (Optional):

Toasted sesame seeds

Instructions

Make the Sauce: In a small bowl, whisk together all the sauce ingredients: soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and gochujang. Set it aside.

  • Ground beef getting a deep brown crust as it cooks in a hot wok, a key step for a flavorful Korean beef bowl recipe.

Cook the Beef: Heat a large skillet or wok over medium-high heat. Add the ground beef to the hot pan. Use a spoon to break it up into large chunks and let it cook for 3-4 minutes, without stirring, to get a deep brown crust on the bottom.

Break Up and Drain: Continue to cook the beef, breaking it up into smaller crumbles, until it is no longer pink. If there is a lot of excess fat, carefully drain it from the pan.

Add the Sauce: Pour the prepared sauce over the cooked ground beef in the skillet. Stir everything together.

Simmer: Let the beef and sauce simmer together for 2-3 minutes, stirring occasionally, until the sauce has thickened slightly and is beautifully glossy.

Serve: To assemble your Korean ground beef and rice bowls, spoon a generous amount of the beef over a bed of warm rice. Garnish with a sprinkle of sesame seeds and sliced green onions.

          Notes

          Notes

          • What is gochujang? Gochujang is a fermented Korean chili paste that is a key ingredient for authentic flavor. It's not just spicy; it's also a little sweet and deeply savory. You can find it in the international aisle of most grocery stores.
          • Meal Prep: This is a fantastic recipe for meal prep. You can cook the beef ahead of time and store it in the fridge for up to 4 days. It reheats beautifully.
          • Make it a Lettuce Wrap: For a great low-carb option, serve the Korean beef in crisp lettuce cups instead of over rice.

          Kitchen Rescue Tips!

          • The Problem: "My beef is grey and steamed, not brown."
            • The Rescue: Your pan was not hot enough, or you stirred the meat too much at the beginning. The secret to flavorful ground beef is to let it sit in the hot pan and develop a dark brown crust before you start breaking it up. Don't be afraid of that sizzle!
          • The Problem: "I don't have fresh ginger."
            • The Rescue: That's perfectly fine. You can substitute 1/4 teaspoon of ground ginger powder in the sauce instead.
          • The Problem: "The sauce is too thick or too thin."
          • The Rescue: This is an easy fix. If the sauce is too thick, just add a tablespoon or two of water to the pan. If it's too thin, just let it simmer for another minute or two, and it will reduce and thicken up perfectly.
