Ingredients

2 large ripe avocados

1/2 cup unsweetened cocoa powder

1/2 cup pure maple syrup (or to your taste)

1/4 cup unsweetened almond milk (or other non-dairy milk)

1 teaspoon vanilla extract

A tiny pinch of salt

For Garnish (Optional):

Fresh berries (like raspberries or strawberries)

A sprinkle of sea salt

Chocolate shavings

Instructions

Prepare the Avocados: First, cut the avocados in half, remove the pits, and scoop the flesh into a high-speed blender or a food processor.

    Add Everything Else: To the blender, add the cocoa powder, maple syrup, almond milk, vanilla extract, and the pinch of salt.

      Blend Until Smooth (The Most Important Step!): Secure the lid and blend on high for 1-2 minutes, until the mousse is completely and totally smooth. You may need to stop and scrape down the sides of the blender once or twice to make sure everything is incorporated. There should be absolutely no green specks left.

      Taste and Adjust: Taste the mousse. If you'd like it a little sweeter, add another tablespoon of maple syrup and blend again.

      Chill (Recommended): For the best flavor and texture, transfer the mousse to small serving dishes or glasses, cover, and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld and the mousse to firm up.

        Garnish and Serve: Before serving, top with some fresh raspberries, a tiny sprinkle of flaky sea salt, or some chocolate shavings.

          • Ripe Avocados are Key: You must use avocados that are perfectly ripe for this recipe. They should be slightly soft to the touch. An under-ripe avocado will not blend smoothly and will have a strong "green" flavor.
          • Make it Your Own: Feel free to add a pinch of cinnamon or a teaspoon of instant espresso powder to the blender to enhance the chocolate flavor.
          • Storage: Store any leftover mousse in an airtight container in the refrigerator for up to 2-3 days.

          • The Problem: "My mousse tastes a little like avocado."
            • The Rescue: This usually means your avocado was a little under-ripe, or your cocoa powder was not strong enough. The fix is to add more of your "strong" flavors. Add another tablespoon of cocoa powder and another small splash of maple syrup and blend again. The extra chocolate and sweetness will easily overpower any remaining avocado taste.
          • The Problem: "My mousse isn't perfectly smooth."
            • The Rescue: It just needs a little more blending time and maybe a little more liquid. Add another tablespoon or two of milk to help the blender do its job, and then blend until it is completely velvety. Don't forget to scrape down the sides of the blender
