Ingredients

1 tablespoon olive oil

1 large onion, chopped

2 carrots, chopped

2 celery stalks, chopped

3 cloves of garlic, minced

8 cups good-quality, low-sodium chicken broth

4 ounces egg noodles

2 cups cooked, shredded chicken (from a rotisserie chicken is perfect)

1/2 teaspoon dried thyme

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped

Instructions

Sauté Veggies: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened. Add the minced garlic and cook for one more minute until fragrant.

Boil Broth: Pour in the chicken broth and add the dried thyme. Increase the heat and bring the soup to a rolling boil.

Cook Noodles: Add the egg noodles to the boiling broth. Cook for 6-8 minutes, or until they are tender.

    Finish the Soup: Turn the heat down to low. Stir in the cooked, shredded chicken and the fresh parsley to warm them through.

    Season to Taste: This is a crucial step. Taste the soup and add salt and pepper until the flavors are just right. Serve hot.
