Ingredients

1 tablespoon olive oil

1 can (15-ounce) black beans, rinsed and drained

1 teaspoon chili powder

1/2 teaspoon ground cumin

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

2 tablespoons water (or salsa)

A squeeze of lime juice (optional, but recommended!)

Salt and black pepper, to taste

6-8 small flour or corn tortillas

Your Favorite Toppings: Shredded lettuce, diced tomatoes, salsa, avocado, shredded cheese, a dollop of Greek yogurt or sour cream.

Instructions

Heat the Pan: Heat the olive oil in a medium skillet over medium heat.

Add Beans & Spices: Add the rinsed and drained black beans to the hot skillet. Sprinkle in the chili powder, cumin, garlic powder, and onion powder. Stir everything together for about 1 minute until the beans are coated and fragrant.

Mash & Simmer: Use the back of a spoon or a potato masher to gently mash about half of the beans directly in the skillet. This creates a creamy texture that holds everything together. Pour in the water or salsa and stir.

Cook: Let the mixture simmer for 3-5 minutes, stirring occasionally, until it has thickened slightly. Remove from the heat and stir in the squeeze of lime juice (if using). Season with salt and pepper.

    Warm Tortillas: While the beans are simmering, warm your tortillas in a dry pan, the microwave, or directly over a gas flame for a few seconds.

      Assemble & Serve: Spoon the black bean mixture into the warm tortillas and top with all of your favorite toppings. Serve immediately!

      • The Mashing is Key! Don't skip the step of mashing some of the beans. This is the secret that keeps your taco filling from being runny and falling out.
      • Toast Your Tortillas: For the best flavor and texture, warm your tortillas in a dry skillet for about 30 seconds per side until they are soft and have a few little brown spots.
