15-Minute Garlic Parmesan Pantry Pasta

Ingredients

8 oz (225g) long pasta, like spaghetti or linguine

1/4 cup good quality olive oil

4-5 cloves of garlic, thinly sliced

1/2 teaspoon red pepper flakes (or to your taste)

1/2 cup grated Parmesan cheese, plus more for serving

Salt and black pepper, to taste

Optional Add-in: 1 can (5-ounce) tuna in oil, drained, or 1 can (15-ounce) chickpeas, rinsed

Instructions

Cook the Pasta: Bring a large pot of heavily salted water to a boil. Add the pasta and cook according to package directions until al dente.

The Secret Step: Just before draining the pasta, reserve about 1.5 cups of the starchy pasta water. This is the magic ingredient that will create your creamy sauce!

    Scent the Oil: While the pasta is cooking, heat the olive oil in a large skillet over low-medium heat. Add the sliced garlic and red pepper flakes. Cook gently for 2-3 minutes, swirling the pan, until the garlic is fragrant and just barely starting to turn golden. Do not let it burn!

    Create the Sauce: Drain the pasta and immediately add it to the skillet with the garlic oil. Add about 1/2 cup of the reserved pasta water and the grated Parmesan cheese. Toss everything together vigorously for about 1 minute.

    Emulsify: As you toss, the starchy water, oil, and cheese will come together to form a light, creamy sauce that coats every strand of pasta. If it looks dry, add another splash of pasta water.

      Serve: Season with salt and pepper to taste. If using, stir in the tuna or chickpeas. Serve immediately in warm bowls with a generous sprinkle of extra Parmesan.

      • Don't Burn the Garlic! The goal is to gently infuse the oil with garlic flavor. If it burns, the oil will be bitter. Low and slow heat is the key.
      • Salt Your Pasta Water: This is your only chance to season the pasta itself. The water should taste like the sea.
      • Be Brave with Tossing: Don't be shy when you're tossing the pasta, water, and cheese. The vigorous motion is what helps create that beautiful, creamy sauce.

      • The Problem: "My sauce is oily and thin, not creamy!"
      • The Quick Fix: This is the most common issue, and the rescue is simple: you either didn't add enough pasta water, or you didn't toss it enough. Add another splash of the hot pasta water and continue to toss and stir vigorously over low heat. You will see it transform into a creamy sauce before your eyes.
      • The Problem: "My pasta is bland!"
      • The Rescue: Your pasta water might not have been salty enough. Don't worry! Just add a little more salt and another generous handful of Parmesan cheese and toss again. A squeeze of fresh lemon juice (if you have one) will also brighten everything up instantly.
