Ingredients

2 cups shredded rotisserie chicken

2 large flour tortillas or wraps

1 large ripe avocado

2 large handfuls of fresh spinach

2 tablespoons plain Greek yogurt (or mayonnaise)

1 teaspoon fresh lemon juice

Salt and black pepper, to taste

Instructions

Prepare the Chicken: If you haven't already, shred the rotisserie chicken.

  • A golden-brown rotisserie chicken on a cutting board, with hands shredding the meat with two forks.

Make the Avocado Mash: In a small bowl, mash the avocado with the Greek yogurt and lemon juice. Season with a pinch of salt and pepper.

Warm the Tortillas (Optional): You can warm your tortillas in the microwave for 10-15 seconds to make them softer and easier to roll.

    Assemble the Wraps: Spread half of the avocado mash onto each tortilla. Top with a handful of spinach, then pile on the shredded chicken.

    Roll and Serve: Tightly roll up your wraps like a burrito. You can cut them in half to serve. Enjoy immediately!

      • The Problem: "My wrap is a little soggy!"
      • The Quick Fix: Make sure your spinach is completely dry before adding it. If you wash it, pat it dry with a paper towel.
